Photographer's Note

Shot taken in San Gimignano. San Gimignano is a very peaceful town within easy reach of Siena and Florence. You don't need to walk long before you encounter the enchanting productive land outside San Gimignano town!
The "olivo" or olive tree has a huge importance to the Italians, if one judges by the number of thousands of hectares which are given over to growing olives. The olives are not only used as eating or cooking but for making oil, for which the Italians are experts! The quality depends very much on the region in which the olives are grown, their variety, the ripeness at which they're picked, how soon they'are crushed and the crushing method. My understanding is that the best olive oil is extra-virgin olive oil (now in Italian: olio d'oliva extravergine).
