Photographer's Note

Here is a shot of the "Kriek Mort Subite", a typical belgian beer.

Kriek is obtained by adding fresh black cherries to young Lambic. After 4 to 5 months of fermentation, only the peel and stones are left and the kriek is ready to be filtered and bottled.Over several months of fermentation the characteristic bouquet of the kriek comes to the fore. Because of the high price of fresh black cherries and their limited availability (a short period at the beginning of August), it is more advantageous for some brewers to use cherry juice, which is available during the whole year.
